- ItemDEVELOPMENT OF FIBRE RICH SNACKS AND THEIR EFFECT ON WEIGHT REDUCTION AMONG OBESE BOYS(2011) Kalpana, C AChildhood obesity is an important public health rapidly increasing worldwide. Unhealthy eating and over consumption of snacks high in fat, calories or added sugars are considered as major contributors of childhood obesity. The present study aimed at developing fibre rich snacks and evaluating their effect on selected obese boys. Forty obese boys in the age group of 10-12 years were divided into 4 groups with 10 members in each group. Group I, II and III were treated as experimental groups and group IV as control group. Three high fibre snacks were evaluated through changes in height, weight and Body Mass Index after a period of 3 months. A maximum increase in height was observed among Group I & II after the study period. Group II supplemented with steamed snack 2 showed a highly significant reduction in weight ( I .6kg),Group I (0.9kg) & Group III (1.1kg) reduction in weight. The BMI of all the experimental groups were found to decrease from 0.9 to 1.14 with a higher reduction seen among group II. The findings revealed that consumption of high fibre snacks consisting of varagu, horse gram and curry leaves was found to be very effective in weight reduction of obese boys.
- ItemDevelopment of freeze dried pomegranate peel powder and acceptability of formulated tea(2016) Kalpana, C APomegranate {Punica granatum L.) peel is a nutritive, antioxidant rich by-product, easily available after production of pomegranate juice. The stutiy aimed to develop a fi"eeze- dried pomegranate peel powder, identify its physico-chemical |iroperties, formulate tea and evaluate the sensory attributes. Red pomegranate peels were freeze dried and ground to a fine powder. The fi'eeze dried pomegranate peel powder and a randotnly selected commercial tea powder were analysed for physico-chemical properties, functional properties, nutrient composition, phenolic constituents, and sensory analysis. Samples weighing 2 grams, 3 grams and 5 grams each of the pomegranate peel powder and commercial tea |iowder were added to 125 ml of purified water and allowed to boil for the extraction of essence Ihe tea samples were subjected for sensory evaluation by thirty semi trained panel members. I he moisture, ash, pH, titratable acidity, water absorption capacity, oil absorpthm capacity and swelling power were found to be higher in the pomegranate peel powder. Total poly|ihcnol conieni, tannins and free radical scavenging ability were high in pomegranate peel |iowder. I’omegranate peel powder had a better nutritional composition and phenol ic const i tuents comptired to the commercial tea powder and exhibited good antioxidant properties.

Adolescent is a i rucial period in life and implies multiple physiological and psychological changes that affect nuirifional needs and habits. Meal skipping and eating irregularly are common during adolescence and especially prevalent during inidtile aiul late adolescence. High fiber diets provide bulk or more satiating and have been linked to lower hodv weight. Niitritioii education must help teens to become informed decision makers about their diets. Three hundred atlolesceiu girls were involved m screening for obesity. From them forty five adolescents and baseline survey was conducted with them and then they divided into three groups each have 15 members. In this study they researcher has developed high fiber recipes like ko'/hukattai, roti and porridge using fiber rich ingredients like varagu, horse gram and curry leavers. Four differeiu samples of high fiber recipes were developed using the same ingretlients at various proportion and then it was subjected to organoleptic evaluation with 30 semi-trained panel members. Sample III got over all acceptability then other samples in three high fiber recipes. Recipes are subjected to biochemical analysis. Dietary fiber content in ko'/.liukatti, roti .nid porridge found to be 7g, 8g and 8g respectively. Rower point was pi'epared for nutrition education based on management of obesity and meal replacement given to obese adolescent girls in group 1 and nutrition education mily nutrition education given to group 11. After three months of meal replacement and nutrition education, the changes in fieiglu, weight, |:MI, Waist to hip ratio and Imdy fat peicentage were evaluated. From the study I'esults meal replacement wa.s very effecuve- in weight reduction.

Reduced physical activity and inereased energy intake both have major contribution to the establishment of childhood obesity. Psychological and social problems, increased plasma insulin, I elevated blood lipid, lipoprolcins and blood pressure arc the various factors known to be associated I with childhood obesity. Hence, the study was conducled to determine the energy balance, psychosocial ' problems and biochemical profile of scIccLcd obese children. Time utilization pattern of obese boys and girls (n=64) was sliidicd to assess their physical activity and energy expenditure levels. The energy balance was ealeulaietl by llnding the ditference in the energy intake and energy expenditure of the children. Psychosocial and beliavioural adjustment problems faced by obese children at school and home were studied fur both the boys and girls. Biochemical parameters namely blood glucose, haemoglobin and lipid prolllc which included total cholesterol, scrum triglycerides, HDL, LDL and VLDL eholeslerol were determined using standard pi'ocednres. Both boys and girls exhibited a positive energy balance which was higlicr in obese boys than in obese girls. The mean total cholesterol level of obese boys (158.3 mg dl) was within the normal range but in the case of obese girls the level (178.7 mg/dl) was found to be slightly higher than the normal. Overweight and obese children are likely to develop lifestyle diseases like diabetes mellitus and cardiovascular diseases at a younger age which are largely preventable. Slralegie.s aimed at retlucing caloric intake and increasing caloric expenditure through regular exercise are necessary to meet the challenges.
